Chocolate Vodka

RECIPE
Makes approx 10 drinks*

EQUIPMENT
Microplane or grater 
Coffee filter paper 
V60 dripper or funnel

INGREDIENTS
400ml Mermaid vodka - sea salt 
40g 65-70% dark chocolate 

*Requires 24 hour infusion

METHOD

Finely grate the chocolate using a micro plane.

Place the grated chocolate into a clean bottle or jar and pour in the vodka

Seal tightly and leave at room temperature for 24 hours to infuse

Line a V60 or a funnel with a coffee filter paper, rinse with cold water to remove any paper taste and set above a clean container

Carefully pour the chocolate vodka mix into the filter leave to filter through

Discard the filter paper and transfer the clear chocolate vodka in to a clean bottle and seal with a lid

Keep at room temperature until required
