Mince Pie Affogato

Whether an indulgent way to end a dinner or for using up leftover mince pies, enjoy our co-founder and Michelin-starred-chef Ashley Palmer-Watts' seasonal twist on a classic Italian affogato.

EQUIPMENT

Mixing bowl

Wooden spoon

Small container

Ice cream scoop

Small glass or cup

INGREDIENTS

250g of soft-serve vanilla ice cream

Two short-crust mince pies

Six shots of espresso

Optional gold leaf

Method

Remove ice cream from the freezer, allowing it to soften for 20 minutes in the fridge.

Cut each mince pie into eight pieces and place into a large mixing bowl.

Add chunks of softened ice cream, mixing with a wooden spoon to combine. Be careful not to over-mix and keep small mince pie chunks throughout the ice cream.

Place the ice cream into a container, then inside the freezer to firm up.

To Serve

Add a generous scoop of ice cream into a small glass or cup.

Optionally, decorate with gold leaf for a festive touch.

Brew a fresh shot of expresso and pour around the ice cream to serve.
