Raisin & Demerara Syrup

Does anything say ‘Christmas’ like the combination of allspice, orange peel, raisin and golden demerara? Combine with your favourite tipple and top up with soda for the festive drink of dreams.

Makes approx. 10 drinks*

INGREDIENTS

150ml Water

100g Demerara sugar

50g Raisins

8 x Allspice berries

1 x Strip orange peel

*Requires 24 hour infusion

In a sauce pan combine the water and sugar.

Heat to 80 ̊C to dissolve the sugar.

Place the raisins, allspice & orange peel in to a jar or container.

Pour the warm syrup over the raisin mix, leave to cool.

Then cover with a lid and place in the fridge for 24 hours.

Pass the syrup through a fine sieve and discard the raisins, keep in the fridge until required
